Prep Time: 24-48 hours
Cook Time: 2 hours
Total Time: 26-50 hours
Yield: 3-4 Servings

Ingredients

3 Pounds of chicken wings, sectioned
3 tablespoons of Avocado Oil
Juice of 2 Limes
1/4 cup Tequila
1/2 cup Cilantro, finely chopped
1/4 cup Green Onion, finely chopped
2 teaspoons of Garlic Paste or minced Garlic
3 tablespoons of Jacobs Coronado Chicken Seasoning

Directions

1. Combine all ingredients in a Ziplock for easy cleanup or a large bowl for marinade to coat chicken evenly. This marinade is best on the wings after sitting in the refrigerator for 24-48 hours but can be cooked the same day after allowing wings to sit in the marinade for at least 2-4 hours. The more time the wings have to sit in the marinade, the more the flavors intensify.
2. These wings are best prepared grilled / smoked. However, if baking, after the wings have gone through the marination process you can put them in an oven safe pan covered for an hour and a half at 350 degrees. What happens while the chicken is in this tight seal is the chicken starts to breakdown as though it were in a sauna and the chicken steams and pulls out the natural fat which mixes with the marinade.
3. Now you can uncover the chicken. You’ll notice the chicken created a nice marinade liquid. This where the magic happens.
4. Remove most of the liquid and set aside if it created too much for your taste but at this point, we are trying to crisp the outside and layer flavors which involves basting and flipping chicken until your desired crispiness and color are reached.
5. Baste and flip chicken every 10-15 minutes for about 30-45 minutes depending on your oven.
6. Pro Tip: If more crunchy or crispy outer coating is the goal and the above directions aren’t quite getting you what you want, you can sprinkle about a tablespoon of cornstarch into the marinade. This is completely optional and not required for fantastic wings but cornstarch is a great trick when frying or baking to fry.
